Welcome to the first instalment of Weekly Healthy Energizing recipes and tips! This week’s recipe is Granola!
These healthy, energizing granola bars will boost your mood and your metabolism!
2 cups of rolled oats or popped rice
1/2 cup of coconut optional
Chopped dry fruit (berries/ orange rind/peaches/apple/dates) or grate in fruit pieces
Dark chocolate/cacao nips optional
2 tablespoons of honey
2 tablespoons of coconut oil or 2 tablespoons of natural, sugar-free nut butter
1 tsp vanilla extract
pinch of salt
Roast dry mix for 10minutes until golden brown
Mix the other ingredients in a saucepan over a medium-low heat pour over roasted mix and spread into a baking tin / deep dish for bars, for granola spread out on a baking tray.
Bake for a further 10- 15minutes. Allow to cool down then cut into bars and keep in an airtight container. For tasty granola leave on greaseproof paper to cool down.
