These gluten-free protein pancakes are a great way to enjoy a delicious “cheat meal” without the added nasties. Get lean and fulfill that insatiable sweet tooth craving!
2 cups gluten – free cake flour
3 x large eggs
1 cups of unsweetened almond / coconut milk (I used Almond as I love my almond milk!)
1/2 handful of Cacao chips / blueberries (or both?)
2 small bananas (mashed)
2 scoops 100% whey protein
1/2 teaspoon of cinnamon
1/4 teaspoon of baking powder
coconut oil for frying
Separate eggs into two separate bowls. Beat egg whites till soft peaks appear. Gently beat egg yolks separately. Sift dry ingredients into the egg yolk mix. Once all mixed slowly fold in the egg whites without allowing to much mixing. The secret with the folding method is to make sure your pancakes are light and fluffy.
(If your batter seems to thin add a little more almond flour)
Heat coconut oil and fry away!
Sprinkle with xylitol and cinnamon or drizzle with honey.
